Cod Florentine

My favorite fish recipe!
The recipe calls for some filets of cod,
broiled till flaky,  in a little white wine,  S&P and butter.
Add pkg of creamed spinach on top,  cover with grated swiss cheese, put it back under the broiler till the cheese starts to bubble and brown.. Serve over rice.
Yummy.

Here, I used tilapia instead of sole (we have tilapia), made my own creamed spinach with frozen garden spinach,(we don't buy supermarket veggies) used gouda cheese (we have gouda cheese)
I used basmati rice, it is my favorite.

That looks yummy! So you are on vacation? Lucky you! The girls were away at different camps and we were to have a week sans kids; well, the second day, got a call from Stella's camp that she was sick so off we go on a 5 hour round trip to Orcas Island to pick her up, lol! Needless to say our plans were foiled!

Oh, that looks yummy! So you are on vacation? Lucky you! The girls were at separate school camps and we were all excited for a week sans kids...well, got a phone call on day two that Stella was sick, so off we go on a 5 hour trip to retrieve her from Orcas Island! Needless to say our "adult" plans were shot, lol!
